Ingredients
- 2 cups milk
- 4 large eggs
- 7 tablespoons butter melted
- 1/2 cup all purpose flour
- 1 cup cheddar cheese shredded
- 5 ounces cooked chicken chopped
- 4 ounces creamed corn
- 1 tablespoon fresh parsley chopped
- 1 tablespoon fresh chives snipped
- arugula leaves for garnish
- salad to serve
Method
- Preheat oven to 350°F. Lightly grease a 10 inch pie plate.
- In a large bowl, whisk together milk, eggs and butter and season to taste.
- Sift flour into a large bowl. Make a well in center and gradually whisk in milk mixture.
- Mix in half the cheese and all the chicken, corn, parsley and chives and season to taste. Spoon mixture into prepared plate and sprinkle with remaining cheese.
- Bake for 45-50 mins, until firm. Sprinkle with arugula. Serve with salad.
