Ingredients

  • 2 cups milk
  • 4 large eggs
  • 7 tablespoons butter melted
  • 1/2 cup all purpose flour
  • 1 cup cheddar cheese shredded
  • 5 ounces cooked chicken chopped
  • 4 ounces creamed corn
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives snipped
  • arugula leaves for garnish
  • salad to serve

Method

  • Preheat oven to 350°F. Lightly grease a 10 inch pie plate.
  • In a large bowl, whisk together milk, eggs and butter and season to taste.
  • Sift flour into a large bowl. Make a well in center and gradually whisk in milk mixture.
  • Mix in half the cheese and all the chicken, corn, parsley and chives and season to taste. Spoon mixture into prepared plate and sprinkle with remaining cheese.
  • Bake for 45-50 mins, until firm. Sprinkle with arugula. Serve with salad.
