Ingredients

  • 1/3 c. shortening
  • 1/2 c. peanut butter
  • 1/4 c. firmly packed brown sugar
  • 1 c. sugar
  • 1 c. unsifted flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 (3 1/2 oz.) can Baker's Angel Flake coconut
  • 1 tsp. vanilla
  • 2 eggs

Method

  • Cream together shortening, peanut butter and sugars until light and fluffy.
  • Add vanilla and eggs.
  • Beat well.
  • Mix in flour, baking powder and salt, stirring until thoroughly blended. Stir in coconut.
  • Spread evenly in greased 13 x 9-inch pan.
  • Bake at 350° for about 25 minutes or until golden brown.
  • Cool.
  • Cut into bars.
  • Makes about 36.
