Ingredients

  • 3/4 c. shortening
  • 1 c. brown sugar
  • 1/4 c. pineapple juice
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 3 c. oatmeal (uncooked)
  • 1/2 c. white sugar
  • 1 egg
  • 1/2 c. crushed pineapple
  • 1 c. flour
  • 1/2 tsp. soda

Method

  • Cream shortening and sugars.
  • Add egg, vanilla and juice; mix thoroughly.
  • Sift flour, salt and soda; stir into mixture.
  • Mix crushed pineapple into mixture, then mix in the oatmeal.
  • Let dough stand 30 minutes before dropping by teaspoonfuls on well-greased cookie sheet.
  • Bake at 350° for 12 minutes.
  • Makes about 5 dozen; standing time allows the oatmeal to absorb the juice.
