- 3 tablespoons Land O Lakes Butter
- 1/3 cup chopped onion
- 1 (6-ounce) can tomato paste
- 2 medium (2 cups) tomatoes, cubed 1-inch
- 1 tablespoon dried basil leaves
- 2 teaspoons finely chopped fresh garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 (6-ounce) boneless skinless chicken breasts
- 6 (3/4-ounce) slices Land O Lakes Deli Provolone Cheese
- 3/4 cup fresh bread crumbs
- 1/4 cup chopped fresh parsley
- 2 tablespoons Land O Lakes Butter, melted
Method
- Heat oven to 350F.
- Melt 3 tablespoons butter in 13x9-inch baking pan in oven.
- Combine all remaining sauce ingredients in bowl; set aside.
- Place chicken into baking pan, turning to coat with butter.
- Spoon sauce mixture over chicken.
- Bake 30-40 minutes or until chicken is no longer pink.
- Combine bread crumbs, parsley and butter in bowl.
- Lay 3 strips cheese over each chicken breast; sprinkle with bread crumb mixture.
- Continue baking 5-10 minutes or until internal temperature of chicken reaches at least 165F and juices run clear when pierced with a fork and bread crumbs are browned.
