Ingredients
- 1 1/2 lb. fresh broccoli
- 1 pt. half and half
- 2 c. water
- 1 lb. Velveeta
- 3/4 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. cornstarch, mixed with 1 c. cold water
Method
- Steam broccoli until tender.
- Put half and half and water in top of double boiler.
- Add cheese, salt and pepper.
- Heat until cheese is melted.
- Add cooked, chopped broccoli.
- Mix cornstarch and water in small bowl.
- Stir into cheese mixture and cook until soup thickens.
- Makes 10 (1 cup) servings.
