Ingredients

  • 1 1/2 lb. fresh broccoli
  • 1 pt. half and half
  • 2 c. water
  • 1 lb. Velveeta
  • 3/4 tsp. salt
  • 3/4 tsp. pepper
  • 1/2 tsp. cornstarch, mixed with 1 c. cold water

Method

  • Steam broccoli until tender.
  • Put half and half and water in top of double boiler.
  • Add cheese, salt and pepper.
  • Heat until cheese is melted.
  • Add cooked, chopped broccoli.
  • Mix cornstarch and water in small bowl.
  • Stir into cheese mixture and cook until soup thickens.
  • Makes 10 (1 cup) servings.
