Ingredients
- 1 large cauliflower
- 1/2 c. finely chopped celery
- 1/4 c. chopped shallots
- 1 c. frozen peas, thawed
- 1/3 c. mayo
- 1 tsp. lemon juice
- 1 tsp. Dijon mustard
- 1 Tbsp. sour cream
- salt and pepper
- lettuce
- 2 tomatoes, cut in wedges
Method
- Break cauliflower into flowerets and rinse well.
- Cook to crisp-tender stage; do not overcook.
- Drain and add celery, shallots and thawed peas.
