Ingredients
- 1 large head cauliflower, about 2 lbs
- water
- salt
- 4 -6 slices bacon
- 1 green pepper, seeded
- 3 tablespoons chopped parsley
Method
- Wash and trim cauliflower and remove most o fthe outer leaves.
- Put whole head in a pot filled with 2-3 inches of boiling salted water-cover.
- Steam cauliflower about 15 minute or until tender crisp, not overcooked.
- Meanwhile, cut the bacon and green pepper into strips.
- Saute bacon until soft or crisp to your liking.
- Drain and keep warm.
- Saute pepper in same pan with bacon drippings.
- Place cooked cauliflower on a serving dish.
- Top with bacon-pepper mixture.
- Sprinkle with parsley.
- Good served with pork chops, flank steak, broiled fish or chicken.
