Ingredients

  • 1 large head cauliflower, about 2 lbs
  • water
  • salt
  • 4 -6 slices bacon
  • 1 green pepper, seeded
  • 3 tablespoons chopped parsley

Method

  • Wash and trim cauliflower and remove most o fthe outer leaves.
  • Put whole head in a pot filled with 2-3 inches of boiling salted water-cover.
  • Steam cauliflower about 15 minute or until tender crisp, not overcooked.
  • Meanwhile, cut the bacon and green pepper into strips.
  • Saute bacon until soft or crisp to your liking.
  • Drain and keep warm.
  • Saute pepper in same pan with bacon drippings.
  • Place cooked cauliflower on a serving dish.
  • Top with bacon-pepper mixture.
  • Sprinkle with parsley.
  • Good served with pork chops, flank steak, broiled fish or chicken.
