- 2 1/4 c. flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt (omit if using salted cashews)
- 3/4 c. light brown sugar, packed
- 1/2 c. white sugar
- 3/4 c. butter or margarine
- 2 large eggs
- 2 tsp. vanilla
- 3/4 c. shredded coconut
- 1 c. chopped cashews
- 1 c. (4 oz.) chopped dates
Method
- Combine butter and sugars.
- Add eggs and vanilla and beat until smooth.
- Combine flour, soda and salt; add to butter mixture.
- Stir in coconut, cashews and dates.
- Drop by rounded teaspoonfuls on ungreased cookie sheet.
- Bake in preheated 300° oven about 20 minutes, or until done.
