Ingredients

  • 2 1/4 c. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt (omit if using salted cashews)
  • 3/4 c. light brown sugar, packed
  • 1/2 c. white sugar
  • 3/4 c. butter or margarine
  • 2 large eggs
  • 2 tsp. vanilla
  • 3/4 c. shredded coconut
  • 1 c. chopped cashews
  • 1 c. (4 oz.) chopped dates

Method

  • Combine butter and sugars.
  • Add eggs and vanilla and beat until smooth.
  • Combine flour, soda and salt; add to butter mixture.
  • Stir in coconut, cashews and dates.
  • Drop by rounded teaspoonfuls on ungreased cookie sheet.
  • Bake in preheated 300° oven about 20 minutes, or until done.
