Ingredients
- 1 1/2 c. flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. chopped walnuts
- 1/4 c. butter, softened
- 1 egg
- 1/2 c. milk
- 1 c. finely grated carrot
Method
- Sift together first six ingredients.
- Toss walnuts into dry mixture.
- Cut
- in
- butter; add milk, egg and carrots.
- Mix lightly, being
- careful
- not
- to
- overmix. Spoon into greased muffin tins until almost full.
- Bake in preheated 400° oven 20 minutes.
- Makes one dozen muffins.
