Ingredients
- 2 slices bacon, diced
- 1/4 c. chopped onion
- 1 clove garlic
- 2 cans (13 3/4 oz. each) chicken broth
- 2 c. carrots, chopped
- 1 c. potatoes, diced
- 1 tomato, chopped
- dash of salt and pepper
Method
- Saute bacon, onion and garlic until bacon is crisp.
- Add remaining ingredients.
- Heat to boiling, then reduce heat. Simmer, uncovered, about 20 minutes.
- Cool slightly, then pour mixture in blender; process until smooth.
- Garnish with a dollop of sour cream.
