Ingredients

  • 2 slices bacon, diced
  • 1/4 c. chopped onion
  • 1 clove garlic
  • 2 cans (13 3/4 oz. each) chicken broth
  • 2 c. carrots, chopped
  • 1 c. potatoes, diced
  • 1 tomato, chopped
  • dash of salt and pepper

Method

  • Saute bacon, onion and garlic until bacon is crisp.
  • Add remaining ingredients.
  • Heat to boiling, then reduce heat. Simmer, uncovered, about 20 minutes.
  • Cool slightly, then pour mixture in blender; process until smooth.
  • Garnish with a dollop of sour cream.
