Ingredients

  • 1 lb. carrots, peeled and shredded
  • 1-1/2 cups apples, peeled, cored and thinly sliced
  • 1/2 cup dark raisins
  • 1/2 cup light mayonnaise
  • 1/3 skim milk
  • 1 Tbsp. lemon juice
  • 1-1/2 tsp. sweetener (or 5 packets)
  • 1/4 tsp. ground cinnamon (optional)
  • 1/8 to 1/4 tsp. ground nutmeg (optional)

Method

  • Combine carrots, apples and raisins in a large bowl.
  • Set aside.
  • Combine remaining ingredients and pour over carrot mixture, tossing to coat.
  • Refrigerate until chilled.
