Ingredients

  • 1 cup chopped carrots
  • 2 teaspoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon brown sugar
  • 1/8 teaspoon black pepper
  • 2 tablespoons sliced toasted almonds
  • 2 tablespoons shredded carrot
  • 1 teaspoon chopped parsley
  • 1/4 teaspoon paprika

Method

  • Simmer 1 cup chopped carrots in a saucepan of water for 30 minutes or until tender; drain. Add carrots, olive oil, salt, cumin, brown sugar, and black pepper to food processor with Easy Hummus; process until smooth. Top hummus with almonds, shredded carrot, parsley, and paprika.
