Ingredients
- 2 c. sugar
- 1 1/2 c. cooking oil
- 4 eggs
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 4 heaping c. shredded carrots
- 1 1/2 c. chopped walnuts
Method
- Cream together sugar and oil.
- Beat in eggs until fully incorporated.
- In another bowl, whisk together flour, baking soda, salt and cinnamon.
- Add dry ingredients to creamed mixture, blending well.
- Stir in carrots and walnuts.
- Bake in 15 x 10 x 2-inch greased pan at 300° for 1 hour.
- Ice when cool.
