Ingredients

  • 1 1/2 c. whole wheat pastry flour
  • 3/4 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 1/2 c. bran
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 1/2 c. milk or Rice Dream
  • 2 Tbsp. apple cider vinegar
  • 1/2 c. honey (scant)
  • 1 c. packed grated carrots
  • 1/4 c. oil
  • 3/4 c. raisins
  • 1/2 c. chopped walnuts

Method

  • Preheat oven to 375°.
  • Combine in medium bowl the first 6 ingredients.
  • Combine in large bowl the remaining ingredients. Combine wet and dry ingredients.
  • Mix just enough to moisten dry ingredients.
  • Pour into greased muffin tins and bake for 20 to 25 minutes.
  • Makes 18 muffins.
