- 1 1/2 c. whole wheat pastry flour
- 3/4 tsp. salt
- 1 1/2 tsp. baking soda
- 1 1/2 c. bran
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/2 c. milk or Rice Dream
- 2 Tbsp. apple cider vinegar
- 1/2 c. honey (scant)
- 1 c. packed grated carrots
- 1/4 c. oil
- 3/4 c. raisins
- 1/2 c. chopped walnuts
Method
- Preheat oven to 375°.
- Combine in medium bowl the first 6 ingredients.
- Combine in large bowl the remaining ingredients. Combine wet and dry ingredients.
- Mix just enough to moisten dry ingredients.
- Pour into greased muffin tins and bake for 20 to 25 minutes.
- Makes 18 muffins.
