Ingredients

  • 1 cup self-rising flour, plus 2 tbsp, sifted
  • 2/3 cup firmly packed brown sugar
  • 1 1/2 tbsp butter, melted
  • 1/2 cup milk
  • 2.5 oz dates, seeded, finely chopped
  • -1 None Caramel Sauce
  • 2/3 cup brown sugar
  • 4 1/2 tbsp butter, chopped

Method

  • Preheat oven to 350°F. Grease a shallow baking dish.
  • Combine flour, sugar, butter, milk and dates in prepared dish. Set aside.
  • For the caramel sauce, combine brown sugar, 2 cups boiling water and butter. Stir until sugar is dissolved and butter melted. Slowly pour over batter in prepared dish and bake for 40 mins, or until center is firm.
  • Serve immediately.
