Ingredients

  • 1 3/4 c. unsweetened apple juice, divided
  • 1/3 c. cinnamon candies
  • 1/4 tsp. red food coloring
  • 1/2 tsp. vanilla extract
  • 4 Granny Smith or other tart cooking apples, cored and sliced
  • 3 Tbsp. cornstarch
  • 1 purchased 9-inch graham cracker pie crust
  • 1 1/2 c. frozen whipped topping, thawed
  • 1/2 ground cinnamon
  • 1 Tbsp. lemon juice
  • 2 Tbsp. butter or margarine

Method

  • In a large saucepan, combine 1 1/2 cups apple juice, candies, food coloring, vanilla extract, lemon juice and apples.
  • Bring to a boil, then simmer just until apples are tender, about 10 to 15 minutes, stirring frequently.
  • Combine remaining 1/4 cup juice and cornstarch.
  • Stir into apple mixture and continue to cook until thickened, about 2 minutes.
  • Then cook for another 2 to 3 minutes; add butter.
  • Remove from heat; cool to room temperature.
  • Spread apple filling over bottom of pie crust.
  • Chill for several hours or until holds its shape.
  • Before serving, combine whipped topping and cinnamon.
  • Top each slice with a dollop of the mixture. Yield:
  • 6 to 8 servings.
