Ingredients

  • 2 grapefruits
  • 1 cup sugar
  • 12 cup light corn syrup
  • 1 cup water

Method

  • Remove peel in lengthwise sections.
  • Cover with cold water; boil for 5 minutes.
  • Drain.
  • Repeat three times.
  • Dry well on paper towels.
  • Cut peel into 1/4 inch strips.
  • Combine sugar, corn syrup, and water in saucepan.
  • stir over low heat until sugar is dissolved.
  • Add peel and bring to a boil.
  • Cook over low heat about 40 minutes until most of the syrup is absorbed.
  • Drain off excess syrup.
  • Roll peel a few pieces at a time in granulated sugar.
  • Let dry for 24 hours on a wire rack.
  • Store in a covered container.
