Ingredients

  • 3/4 lb. ground beef
  • 2 1/2 c. milk
  • 1 c. yellow cornmeal
  • 2 eggs, beaten
  • 1 (14 1/2 oz.) can tomatoes
  • 1 (7 oz.) can corn
  • 1 (2 1/4 oz.) can ripe olives
  • 1 pkg. Lawry's spice for chili
  • 1 tsp. garlic salt
  • 1 tsp. chili powder
  • 1 1/2 c. Cheddar cheese (6 oz.)
  • 2 Tbsp. yellow cornmeal

Method

  • In a medium skillet, brown ground beef until crumbly.
  • Drain fat.
  • In medium bowl, combine milk, 1 cup of cornmeal and eggs; blend well.
  • Add ground beef and remaining ingredients except cheese and 2 tablespoons of cornmeal.
  • Stir to blend.
  • Pour into lightly-greased 12 x 8 x 2-inch baking dish.
  • Bake, uncovered, in a 350° oven for 35 to 40 minutes.
  • Sprinkle with cheese and 2 tablespoons of cornmeal.
  • Continue baking until cheese melts and cornmeal browns.
  • Let stand 10 minutes before serving.
