Ingredients

  • 1 pkt 12 ounce Butterscotch Chips
  • 6 Tbsp. Butter
  • 2 c. Graham cracker crumbs
  • 1 c. Finely minced walnuts
  • 2 pkt 8 ounce each cream cheese, soft
  • 1/2 c. Sugar
  • 4 x Large eggs
  • 1/4 c. Flour
  • 2 Tbsp. Lemon juice

Method

  • 1.
  • In a small heavy saucepan over low heat (or possibly in a microwave oven in a microwave safe bowl or possibly saucepan for 4 min on 70% power), heat the butterscotch chips and butter, stirring till smooth.
  • If you use a microwave safe saucepan or possibly bowl, be sure to cover it.
  • 2.
  • Transfer to large bowl.
  • With a fork, stir in the graham cracker crumbs and walnuts till the mix resembles crumbs; reserve 2 c. for the topping.
  • Press remaining mix into a 13 x 9 x 3 baking pan and bake in preheated 350F oven for 12 min.

  • In a large mixing bowl, beat cream cheese and sugar till fluffy.
  • Slowly add in one egg at a time, beating after each addition.
  • Add in flour and lemon juice, and beat till smooth.
  • 4.
  • Pour over warm baked crust, and sprinkle with reserved crumbs.
  • Bake at 350F for 25 min.
  • Cold completely in pan on wire rack.
  • Cut into 2 x 1 inch bars.
  • Refrigeratebefore serving.
