Ingredients

  • 1 3/4 c. unsifted flour
  • 2 Tbsp. baking powder
  • 1/2 Tbsp. baking soda
  • 1/2 Tbsp. cinnamon
  • 1/2 Tbsp. nutmeg
  • 1/2 Tbsp. salt
  • 1 c. ripe mashed bananas (2 or 3 medium)
  • 3/4 c. sugar
  • 1 egg
  • 1/4 c. melted butter
  • 1/4 c. milk
  • 1 1/3 c. chopped walnuts
  • 1 (6 oz.) pkg. or 1 c. Nestle butterscotch morsels

Method

  • Preheat oven to 350°.
  • In a small bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  • In a large bowl, combine bananas, sugar, egg and butter. Beat until creamy. Gradually add flour mixture alternately with milk.
  • Mix until well blended. Stir in 1 cup nuts and butterscotch bits. Pour into well-greased and floured 9 x 5 x 3-inch loaf pan. Sprinkle remaining 1/3 cup nuts on top.
  • Bake at 350° for 60 to 70 minutes. Cool for 15 minutes.
