- 1-1/4 cup Buttermilk
- 2 teaspoons Dried Chives
- 1/2 cups Finely Chopped Fresh Chives
- 2 cups Flour
- 1/2 cups Yellow Cornmeal
- 2 Tablespoons Sugar
- 1 teaspoon Baking Powder
- 2 teaspoons Baking Soda
- 1/2 cups Shredded (not Grated) Parmesan Cheese
- 1 stick Butter, Melted Plus Extra For Brushing On Tops
Method
- Preheat the oven to 425 degrees F. Spray a muffin pan with cooking spray.
- Combine buttermilk and chives in a large mixing bowl. Add all of the dry ingredients to the buttermilk. Next add the cheese and combine well. Add the butter to form a sticky paste.
- Using an ice cream scoop, add the mixture to the muffin pan. Brush the tops with butter and sprinkle a little coarse salt to the top. Bake until nice and golden brown, about 20 minutes. Make sure to test the center with a toothpick to make sure it comes out clean.
