Ingredients

  • 6 very ripe bananas
  • 1 cup sugar substitute
  • 1 teaspoon vanilla
  • 1 12 cups all-purpose flour
  • 12 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • cinnamon

Method

  • In one bowl, mash the bananas until smooth (we like it a bit chunky) and add the sugar and vanilla, blending until incorporated.
  • In another bowl, mix the dry ingredients until well blended and add to the bananas.
  • Mix these thoroughly.
  • Pour this into a 9X13 glass baking dish or a regular loaf pan.
  • Bake at 350 for an hour.
