Ingredients
- mushrooms, stems removed
- eggplant, sliced 1/2 inch thick
- oil
Method
- Preheat broiler to 550°.
- Place eggplant on rack and brush with oil.
- Season with herbs, if desired.
- Broil for 5 minutes. Turn and oil.
- Broil for 3 minutes or add a topping of thick sauce and cheese.
- Arrange mushrooms on rack.
- Put olive oil inside each.
- Broil 4 minutes.
