Ingredients
- 1 lb. broccoli
- 1 red bell pepper, seeded and sliced thinly
- 1 tsp. olive oil
- 1 medium clove garlic, peeled and minced
- up to 1/3 c. low-sodium chicken broth
- 1 tsp. lemon zest
Method
- Cut off broccoli flowerets and slice the stems to make diagonal pieces.
- Saute the broccoli and pepper pieces in the oil with the garlic over medium-high heat for 1 to 2 minutes, stirring constantly.
- Turn the heat to medium and add the chicken broth a little at a time, stirring frequently.
- Continue to add the broth, cooking and stirring until the broccoli is done as desired, about 5 to 6 minutes.
- Garnish with the lemon zest and serve immediately.
- Serves 4.
