Ingredients

  • 1 lb. broccoli
  • 1 red bell pepper, seeded and sliced thinly
  • 1 tsp. olive oil
  • 1 medium clove garlic, peeled and minced
  • up to 1/3 c. low-sodium chicken broth
  • 1 tsp. lemon zest

Method

  • Cut off broccoli flowerets and slice the stems to make diagonal pieces.
  • Saute the broccoli and pepper pieces in the oil with the garlic over medium-high heat for 1 to 2 minutes, stirring constantly.
  • Turn the heat to medium and add the chicken broth a little at a time, stirring frequently.
  • Continue to add the broth, cooking and stirring until the broccoli is done as desired, about 5 to 6 minutes.
  • Garnish with the lemon zest and serve immediately.
  • Serves 4.
