Ingredients
- 1 bunch broccoli flowerets
- 1 1/4 c. low-fat Cheddar cheese, shredded
- 1/2 c. onion, finely chopped
- 1 c. 1% low-fat milk
- 3/4 c. Egg Beaters
- 1/2 c. biscuit mix
- 1/2 tsp. herb seasoning
- 1/4 tsp. paprika
- 1/4 tsp. pepper
Method
- Preheat oven to 375°.
- Steam broccoli for 5 minutes.
- Drain and coarsely chop.
- Coat a 9-inch pie or quiche pan with vegetable spray.
- In dish, layer broccoli, cheese and onion.
- In a blender, combine milk, Egg Beaters, biscuit mix and seasonings.
- Process for 15 seconds; pour over vegetables.
- Bake for 30 to 35 minutes. Let stand for 5 minutes before serving.
- Sprinkle with paprika. Serves 6.
