Ingredients

  • 1 bunch broccoli flowerets
  • 1 1/4 c. low-fat Cheddar cheese, shredded
  • 1/2 c. onion, finely chopped
  • 1 c. 1% low-fat milk
  • 3/4 c. Egg Beaters
  • 1/2 c. biscuit mix
  • 1/2 tsp. herb seasoning
  • 1/4 tsp. paprika
  • 1/4 tsp. pepper

Method

  • Preheat oven to 375°.
  • Steam broccoli for 5 minutes.
  • Drain and coarsely chop.
  • Coat a 9-inch pie or quiche pan with vegetable spray.
  • In dish, layer broccoli, cheese and onion.
  • In a blender, combine milk, Egg Beaters, biscuit mix and seasonings.
  • Process for 15 seconds; pour over vegetables.
  • Bake for 30 to 35 minutes. Let stand for 5 minutes before serving.
  • Sprinkle with paprika. Serves 6.
