Ingredients

  • 1 3/4 c. uncooked rice
  • 3 1/2 c. water
  • 2 (10 oz.) pkg. frozen chopped broccoli
  • 3/4 c. chopped onion
  • 3/4 c. chopped green pepper
  • 4 Tbsp. margarine
  • 1 jar processed cheese spread
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 (3 oz.) can chopped mushrooms (optional)

Method

  • Cook rice and broccoli as directed on packages.
  • Saute onion, bell pepper and celery in margarine.
  • Drain broccoli and combine with cheese spread, sauteed vegetables, undiluted soups and mushrooms.
  • Fold in cooked rice and turn into 3-quart buttered casserole dish.
  • Bake at 350° for 20 to 30 minutes.
