- 1 3/4 c. uncooked rice
- 3 1/2 c. water
- 2 (10 oz.) pkg. frozen chopped broccoli
- 3/4 c. chopped onion
- 3/4 c. chopped green pepper
- 4 Tbsp. margarine
- 1 jar processed cheese spread
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 (3 oz.) can chopped mushrooms (optional)
Method
- Cook rice and broccoli as directed on packages.
- Saute onion, bell pepper and celery in margarine.
- Drain broccoli and combine with cheese spread, sauteed vegetables, undiluted soups and mushrooms.
- Fold in cooked rice and turn into 3-quart buttered casserole dish.
- Bake at 350° for 20 to 30 minutes.
