Ingredients
- 1 rabbit, dressed
- baking soda
- flour
- salt and pepper
- cooking oil
- 2 carrots, chopped
Method
- Cut rabbit into serving size pieces.
- Soak overnight in water to which has been added about a tablespoon of baking soda. Remove, wipe dry and shake in a bag with a mixture of flour, salt and pepper.
- Brown the meat in hot oil.
- Place on a rack in a roasting pan.
- Sprinkle with carrots, add 1 cup water and bake at 300° until tender.
