Ingredients

  • 3 cups Baby Spinach
  • 3/4 cups Toasted, Chopped Walnuts
  • 3/4 cups Fresh Blueberries
  • FOR THE DRESSING:
  • 2 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Blueberry Balsamic Vinegar
  • 1/2 teaspoons Fresh Lemon Zest
  • 1/2 cups Canola Oil

Method

  • Get a large bowl and toss spinach, toasted walnuts, and fresh blueberries in it.
  • Whisk lemon juice, blueberry balsamic and lemon zest together in a small bowl. Continue to whisk while slowly pouring in canola oil to make a gorgeous vinaigrette.
  • Serve the salad immediately with the dressing on the side.! Enjoy!
