Ingredients
- 3 cups Baby Spinach
- 3/4 cups Toasted, Chopped Walnuts
- 3/4 cups Fresh Blueberries
- FOR THE DRESSING:
- 2 Tablespoons Fresh Lemon Juice
- 1 Tablespoon Blueberry Balsamic Vinegar
- 1/2 teaspoons Fresh Lemon Zest
- 1/2 cups Canola Oil
Method
- Get a large bowl and toss spinach, toasted walnuts, and fresh blueberries in it.
- Whisk lemon juice, blueberry balsamic and lemon zest together in a small bowl. Continue to whisk while slowly pouring in canola oil to make a gorgeous vinaigrette.
- Serve the salad immediately with the dressing on the side.! Enjoy!
