Ingredients

  • 1 1/2 c. frozen blueberries (whole, unsweetened)
  • 1/3 c. sugar
  • 2 Tbsp. all-purpose flour or 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 c. hot water
  • 2 Tbsp. butter
  • 3 Tbsp. almond or vanilla flavoring

Method

  • Measure blueberries.
  • In saucepan, combine the sugar with cornstarch or flour and salt.
  • Add lemon juice and water; stir until well blended.
  • Then bring to a boil over high heat, whisking vigorously.
  • Cook until thickened, about 2 minutes.
  • Stir in the berries, butter and flavoring.
  • Serve warm
  • over pound cake, angel cake or ice cream.
