Ingredients

  • 1/2 c. butter or oleo
  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 eggs
  • 1/2 c. milk
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 full c. blueberries
  • 2 tsp. sugar (for top)

Method

  • Cream sugar and butter until fluffy.
  • Add eggs, one at a time. Sift dry ingredients; add alternately with milk.
  • Fold in blueberries.
  • (You can use cranberries, apples or dates, if desired.)
  • Grease muffin tin well with butter.
  • Fill to top of cup; sprinkle with sugar.
  • Bake at 375° for 25 to 30 minutes. Cool in pan for 30 minutes.
  • Makes 1 dozen large muffins.
