- 1 (6 oz.) pkg. cherry flavored gelatin
- 2 c. boiling water
- 1 (15 oz.) can blueberries in heavy syrup (not pie filling), undrained
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1 c. (8 oz.) sour cream
- 1/4 c. chopped pecans
Method
- In a bowl, dissolve gelatin in boiling water.
- Stir in blueberries.
- Pour into a 12 x 8 x 2-inch dish; chill until set. In a mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla and sour cream; mix well.
- Spread over the gelatin layer. Sprinkle with pecans.
- Chill several hours or overnight.
