Ingredients

  • 2 teaspoons butter melted
  • 10 1/2 ounces blueberries fresh or frozen
  • 1/3 cup all purpose flour
  • 1/3 cup granulated sugar
  • 2 tablespoons ground almonds
  • 2 eggs plus 3 egg whites, at room temperature
  • 2 cups 2% milk
  • 1 teaspoon vanilla extract
  • powdered sugar for dusting

Method

  • Preheat oven to 350°F. Coat a baking dish with butter. Arrange blueberries in bottom of dish.
  • Combine flour, sugar and ground almonds. Whisk together eggs, egg whites, milk and vanilla then gradually add to dry ingredients until combined. Pour over blueberries and bake for 40 mins, or until just set. Dust with powdered sugar to serve.
