Ingredients

  • 2 cup all purpose flour
  • 1 1/2 cup ice cold water
  • 2 stick cold butter
  • 1 1/2 tsp sugar
  • 1 pinch salt
  • 2 cup sugar
  • 2 cup blackberries
  • 3 tbsp cornstarch
  • 1 tbsp squeezed lemon juice
  • 1 dash vanilla extract
  • 1/2 stick butter cubes for topping

Method

  • Preheat oven to 400
  • Take 2 sticks of cold butter, flour, sugar & salt and mash together with fork until it resembles small peas
  • Careful to keep ingredients COLD!
  • Add one teaspoon of ice cold water intil you have used your 1/2 cup of water until dough pulls away from bowl and begins to form a ball..
  • Dust counter with flour and turn dough onto board.
  • Quickly form dough into ball and divide in half.
  • Make two seperate disc and wrap individually with plastic wrap.
  • Refrigerate 30 mins before using
  • Next add berries, sugar, cornstarch,vanilla, lemon juice in bowl.
  • Toss around and allow to sit until juices start to form from berries.
  • Take out dough and roll out for.
  • 9 inch ungreased baking dish.
  • Add berry mixture
  • Roll out 2nd dough and cut diagonally, create lattice topping.
  • Add 1/2 stick - cubed butter on top.
  • Brush pie crust w eggwash ( 1 egg mixed w 1/4 cup of water) and bake at 400 til top is golden brown and berries are bubbling
