- 2 (10 oz.) pkg. frozen black-eyed peas
- 1 c. bottled Italian salad dressing
- 2 tsp. sugar
- 1/4 tsp. crushed red pepper
- 1/2 c. sliced celery
- 1/2 c. chopped green pepper
- 1/2 c. chopped red bell pepper
- 1 bunch green onions, thinly sliced
- 1 c. chopped parsley
- salt and pepper to taste
- lettuce leaves
Method
- Cook peas as directed on package; drain.
- Shake Italian dressing, sugar and crushed red pepper in tightly covered container.
- Combine cooked peas, dressing, celery, green pepper, red pepper, onions, parsley, salt and pepper.
- Chill.
- Serve on lettuce leaves.
- Serves 6.
