Ingredients

  • 2 c. Flour
  • 2 tsp Cinnamon,3 if you like
  • 2 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Baking pwdr
  • 3 x Large eggs
  • 2 c. Sugar
  • 3/4 c. Vegetable oil
  • 2 c. Zucchini,grated well liquid removed
  • 1 1/2 c. Walnuts,minced
  • 1/2 c. Raisions,(optional)

Method

  • Preheat oven to 350.
  • Sift first 5 ingredients.
  • Beat Large eggs in a large bowl till light.
  • Gradually add in sugar and beat till thick and lemon colored.
  • Add in oil in thin stream and beat well.
  • Fold in zucchini, nuts and raisins.
  • Add in sifted dry ingredients and blend well.
  • Turn into greased and floured 12-c. bundt pan or possibly 2 8x4 inch loaf pans.
  • Bake till tester inserted in center comes out clean, about 50 min.
  • Let cold 5 min before turning out onto rack.
  • Cold completely before slicing.
