Ingredients

  • 320 g Pecans
  • 150 g Pitted Dates
  • 220 g Butter
  • 180 g Coconut sugar
  • 1/3 teaspoon Fresh nutmeg
  • 4 Eggs, beaten
  • 160 g Self raising flour
  • Dark Maple Syrup
  • 1/2 teaspoon Sea salt

Method

  • 100g of pecans put in a processor and whizz until fine. Boil dates in a large amount of water until very soft.. Drain and whizz in the processor until smooth. Leave to cool.
  • Heat oven to 180°. Beat the butter, sugar, salt and nutmeg together until creamy, then tip in the dates, ground pecans, eggs and beat a bit more.
  • Fold in the flour then spoon into the tin. Sprinkle the remaining nuts over the top. Bake for 40 min. Drizzle with maple syrup. Serve warm. Enjoy!
