- 3/4 c. shortening
- 2 c. sugar
- 3 c. sifted flour (cake flour)
- 1/2 tsp. salt
- 3 tsp. baking powder
- 1/2 c. sweet milk
- 1/2 c. coconut milk
- 1 tsp. vanilla
- 6 egg whites
- 1 fresh coconut
- 1 pt. whipping cream
- 1/4 c. sugar
- 1 tsp. vanilla
Method
- Grate a fresh coconut; whip one pint whipping cream, add 1/4 cup sugar and 1 teaspoon vanilla.
- In between each layer, spread whipping cream mixture and top with coconut.
- Cover top and sides with cream and coconut.
- Keep in refrigerator.
