Ingredients

  • 3/4 c. shortening
  • 2 c. sugar
  • 3 c. sifted flour (cake flour)
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 1/2 c. sweet milk
  • 1/2 c. coconut milk
  • 1 tsp. vanilla
  • 6 egg whites
  • 1 fresh coconut
  • 1 pt. whipping cream
  • 1/4 c. sugar
  • 1 tsp. vanilla

Method

  • Grate a fresh coconut; whip one pint whipping cream, add 1/4 cup sugar and 1 teaspoon vanilla.
  • In between each layer, spread whipping cream mixture and top with coconut.
  • Cover top and sides with cream and coconut.
  • Keep in refrigerator.
