Ingredients
- 4 lb. beets, cooked and peeled
- 4 large onions
- 3 large green peppers
- 1 Tbsp. whole cloves
- 1 1/2 c. sugar
- 1 1/2 c. vinegar
- 1 Tbsp. salt
Method
- Grind beets, onions and green peppers.
- Tie cloves in cheesecloth bag.
- In large kettle, combine vegetables, clove bag, sugar, vinegar, 1/2 cup water and salt.
- Bring to boil, reduce heat and cover.
- Simmer 20 minutes, stirring occasionally.
- Remove clove bag.
- Ladle into hot jars, leaving 1/2-inch headspace.
- Adjust lids.
- Process in boiling water bath (half-pints) for 15 minutes. Makes 13 half-pints.
