Ingredients

  • 4 lb. beets, cooked and peeled
  • 4 large onions
  • 3 large green peppers
  • 1 Tbsp. whole cloves
  • 1 1/2 c. sugar
  • 1 1/2 c. vinegar
  • 1 Tbsp. salt

Method

  • Grind beets, onions and green peppers.
  • Tie cloves in cheesecloth bag.
  • In large kettle, combine vegetables, clove bag, sugar, vinegar, 1/2 cup water and salt.
  • Bring to boil, reduce heat and cover.
  • Simmer 20 minutes, stirring occasionally.
  • Remove clove bag.
  • Ladle into hot jars, leaving 1/2-inch headspace.
  • Adjust lids.
  • Process in boiling water bath (half-pints) for 15 minutes. Makes 13 half-pints.
