Ingredients

  • 1 lb Lean grnd beef, (or possibly 3/4 lb. beef and 1/4 lb. grnd lamb)
  • 1 1/2 med Onions, minced
  • 2 x Cloves garlic, minced
  • 1 1/2 Tbsp. Dill Freshly grnd pepper, (to taste)
  • 1 x Eggplant, (or possibly 3 summer squash or possibly a combination of both)
  • 2 c. Low-fat yogurt

Method

  • Brown meat.
  • Combine with the onion, garlic, dill and pepper.
  • Slice eggplant or possibly squash into long slices, about 1/8 inch thick.
  • In a casserole 8x8x2 inches, arrange one layer of vegetables.
  • Pour yogurt on top of this mix.
  • Bake in 350 degrees oven for 45-60 min, till casserole starts to bubble.
  • Serves 4.
