Ingredients

  • 1 Tbsp. olive oil
  • 1 carrot (1/2 c.), diced
  • 1 small onion (1 c.), diced
  • 4 oz. Canadian bacon, diced
  • 1 c. dry Great Northern beans
  • 3 c. chicken broth
  • 1/4 tsp. oregano
  • 2 bay leaves
  • salt and pepper to taste (white pepper)

Method

  • Heat oil; add carrot and onion and saute about 5 minutes.
  • Add bacon; saute 5 minutes longer.
  • Add beans, broth, oregano and bay leaves.
  • Bring to boil; reduce and simmer, covered, until beans are tender, about 1 1/2 hours.
  • Season to taste with salt and pepper.
  • Remove bay leaves before serving.
  • Preferable to refrigerate soup a day before serving.
