- 1 Tbsp. olive oil
- 1 carrot (1/2 c.), diced
- 1 small onion (1 c.), diced
- 4 oz. Canadian bacon, diced
- 1 c. dry Great Northern beans
- 3 c. chicken broth
- 1/4 tsp. oregano
- 2 bay leaves
- salt and pepper to taste (white pepper)
Method
- Heat oil; add carrot and onion and saute about 5 minutes.
- Add bacon; saute 5 minutes longer.
- Add beans, broth, oregano and bay leaves.
- Bring to boil; reduce and simmer, covered, until beans are tender, about 1 1/2 hours.
- Season to taste with salt and pepper.
- Remove bay leaves before serving.
- Preferable to refrigerate soup a day before serving.
