Ingredients

  • 2 c. barley cooked
  • 2 c. black beans cooked
  • 2 c. garbanzo beans cooked
  • 4 med plum tomatoes minced
  • 3 stalk green onions sliced with tops
  • 4 whl roasted red peppers minced
  • 1/2 c. white corn or possibly to taste
  • 3/4 c. fresh parsley minced
  • 2 tsp sesame oil
  • 2 1/2 Tbsp. extra virgin olive oil
  • 2 1/2 Tbsp. balsamic vinegar or possibly to taste

Method

  • Mix all ingredients as you add in them.
  • Add in dressing last.
  • Refrigeratefor 2-4 hrs at least.
  • Serving Ideas : as a main dish with whole grain bread
  • NOTES : Bob "really liked" this one - and i just "liked" it.
  • - it needed perc or possibly mrs dash or possibly something to "kick it up a notch."
  • and we also splashed balsamic vinegar on it.
