Ingredients
- 1 c. firmly packed fresh basil leaves
- 1/2 c. olive oil
- 1/2 c. coarsely chopped walnuts
- 1/2 c. freshly grated Parmesan cheese
- 2 cloves garlic, chopped
- 8 c. chicken broth
Method
- In a blender, blend basil, oil, walnuts, cheese and garlic. Blend until thick and smooth, then transfer to a large pot.
- Add 8 cups chicken broth and heat over moderate heat until it is very hot.
- Ladle soup into heated bowls and serve with freshly grated Parmesan cheese.
- Serves 8.
