Ingredients
- 1/3 c. flour
- 2/3 c. sugar
- 2 c. milk
- 2 eggs, separated
- 1/2 tsp. vanilla extract
- 1 small box vanilla wafers
- 3 to 4 sliced bananas
- 1/4 tsp. cream of tartar
- 1/4 c. sugar
Method
- Combine flour and 2/3 cup of sugar in saucepan.
- Mix well. Stir in milk and slightly beaten egg yolks.
- Cook over medium heat, stirring constantly, until mixture thickens.
- Cover bottom of an 8-inch lightly greased (spray with cooking spray) baking dish with a layer of vanilla wafers.
- Top with half the bananas and half of the pudding.
- Repeat layers, ending with pudding. Beat egg whites until soft peaks form.
- Add cream of tartar, then gradually the sugar, continuing to beat until whites hold a peak but are not dry.
- Spread evenly over pudding, sealing to the edge of the baking dish.
- Bake at 350° for 10 to 15 minutes or until golden brown.
- Makes 4 to 6 servings.
