Ingredients

  • 1/3 c. flour
  • 2/3 c. sugar
  • 2 c. milk
  • 2 eggs, separated
  • 1/2 tsp. vanilla extract
  • 1 small box vanilla wafers
  • 3 to 4 sliced bananas
  • 1/4 tsp. cream of tartar
  • 1/4 c. sugar

Method

  • Combine flour and 2/3 cup of sugar in saucepan.
  • Mix well. Stir in milk and slightly beaten egg yolks.
  • Cook over medium heat, stirring constantly, until mixture thickens.
  • Cover bottom of an 8-inch lightly greased (spray with cooking spray) baking dish with a layer of vanilla wafers.
  • Top with half the bananas and half of the pudding.
  • Repeat layers, ending with pudding. Beat egg whites until soft peaks form.
  • Add cream of tartar, then gradually the sugar, continuing to beat until whites hold a peak but are not dry.
  • Spread evenly over pudding, sealing to the edge of the baking dish.
  • Bake at 350° for 10 to 15 minutes or until golden brown.
  • Makes 4 to 6 servings.
