Ingredients
- 6 lb. beaver
- 1 Tbsp. pickling spice
- 3 to 4 c. water
- 3 Tbsp. shortening
- garlic salt
- 1 (1 pt.) bottle hickory smoked barbecue sauce
- 1 1/2 Tbsp. Lea & Perrins
- 1 large onion
Method
- Wash beaver and boil with pickling spices for 30 minutes. Take meat out of water and place in baking pan.
- Slice up onion and place over meat.
- Salt, pepper and garlic meat.
- Bake 1 hour at 350°, stirring occasionally.
- Then take barbecue sauce, Lea & Perrins, mix together and pour over meat.
- Bake 1 1/2 more hours at 300°.
