Ingredients

  • 6 lb. beaver
  • 1 Tbsp. pickling spice
  • 3 to 4 c. water
  • 3 Tbsp. shortening
  • garlic salt
  • 1 (1 pt.) bottle hickory smoked barbecue sauce
  • 1 1/2 Tbsp. Lea & Perrins
  • 1 large onion

Method

  • Wash beaver and boil with pickling spices for 30 minutes. Take meat out of water and place in baking pan.
  • Slice up onion and place over meat.
  • Salt, pepper and garlic meat.
  • Bake 1 hour at 350°, stirring occasionally.
  • Then take barbecue sauce, Lea & Perrins, mix together and pour over meat.
  • Bake 1 1/2 more hours at 300°.
