Ingredients

  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. soda
  • 1 tsp. salt
  • 1/3 c. shortening
  • 2/3 c. sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 tsp. vanilla
  • 1/2 c. chopped pecans

Method

  • Sift flour, baking powder, soda and salt.
  • Cream shortening and sugar in a mixer bowl until light and fluffy.
  • Beat in eggs. Add bananas, vanilla and pecans.
  • Add dry ingredients; mix well. Spoon into greased 4 x 8-inch loaf pan.
  • Bake at 350° for 45 to 50 minutes or until bread tests done.
