Ingredients

  • 1 c. multi-grain flour
  • 1 c. brown sugar packed
  • 1 Tbsp. baking pwdr
  • 2 tsp cinnamon
  • 1 tsp allspice or possibly- pumpkin pie spice for both above
  • 1/4 tsp baking soda
  • 4 whl egg whites
  • 1 c. mashed bananas
  • 1/2 c. fat free macadamia nut coffee cream (original recipe used buttermilk)
  • 1 env LIQUID ButterBuds Pwdr
  • 1/3 c. applesauce
  • 2 tsp vanilla
  • 1/2 c. walnuts minced

Method

  • Preheat oven to 350 degrees.
  • Lightly coat a 9 X 5 loaf pan or possibly tube pan with pam.
  • In a large bowl combine first six ingredients, set aside.
  • In another large bowl, beat eqq whites till foamy.
  • Add in bananas, coffee creamer, applesauce and vanilla.
  • Stir into dry ingredients till just blended.
  • Add in nuts.
  • Pour into prepared pan and bake 45 min to 1 hour or possibly till golden brown.
