Ingredients

  • 2 c. macaroni
  • 1/2 lb. sharp Cheddar
  • 4 tsp. minced onion
  • 3/4 tsp. salt and pepper
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 1/4 tsp. dry mustard
  • 2 c. milk
  • fine dry bread crumbs

Method

  • Melt butter and add onion, flour, mustard, salt, pepper and milk.
  • Cut 3/4 of cheese in thin slices and add to mixture, stirring constantly until cheese is melted.
  • Remove from heat. Boil macaroni in salted water for 9 minutes.
  • Butter casserole dish and mix sauce and macaroni.
  • Slice rest of cheese and lay on top of mixture.
  • Sprinkle liberally with fine, dry bread crumbs and bake (uncovered) at 350° for approximately 1 hour.
