Ingredients

  • 1.5 kg broad beans
  • 8 slices streaky bacon
  • 2-3 tbsp olive oil
  • 2 medium onions, finely diced
  • 2 tbsp brown sugar
  • 500 g tomatoes, diced
  • None None Worcestershire sauce to taste
  • 75 g tomato ketchup

Method

  • Cook fava beans in boiling salted water for 5-7 mins then drain and set aside to cool. Remove skin.
  • Fry bacon until crispy then remove and set aside. Add oil to the pan and saute onions for 2-3 mins. Sprinkle with sugar and let caramelize. Add tomatoes and season. Cover and simmer for 20 mins. Add fava beans along with 2-3 dashes of Worcestershire sauce to taste. Add ketchup then distribute between serving bowls and top with crispy bacon.
