Ingredients

  • 2 Tbsp. chopped onions
  • 1/2 c. chopped celery
  • 1/4 c. chopped green pepper
  • 2 Tbsp. butter
  • 2 c. cooked, diced chicken
  • 1/2 c. chopped, toasted almonds or pecans
  • 2 Tbsp. chopped pimento
  • 1/2 c. cream of chicken soup (undiluted)
  • 1/2 tsp. salt
  • 2 Tbsp. lemon juice
  • 1/2 c. grated Cheddar cheese
  • French fried onion rings

Method

  • Saute onion, celery and pepper in butter until tender. Combine with chicken and other ingredients except cheese and onion rings.
  • Put into greased casserole and bake about 25 minutes at 350° or until thoroughly heated.
  • Remove from oven; cover with cheese and top with onion rings.
  • Return to oven and heat until cheese is melted, being careful not to burn onion rings.
