Ingredients

  • 1 package of Regular or thick Sliced Bacon
  • cooked
  • drained and crumbled. 8 eggs
  • at room temperature
  • 1/2 cup heavy cream
  • 2 cups Parmesan cheese
  • grated or shredded
  • 2 lbs fettuccine
  • semolina or spinach
  • 1/2 cup butter
  • softened
  • 2 cups fresh spring peas
  • 1 cup mushrooms(sliced or button)
  • 1 cup light olive oil
  • 1/4 cup basil
  • chopped.

Method

  • Beat together: eggs,cheese,butter,basil.
  • Cook pasta,drain and return to pan while still hot. Toss hot pasta with cream,egg and butter until butter has melted completely. Add Bacon,tomatoes,spreing peas,mushrooms and olive oil. Toss lightlybut thoroughly to avoid bruising the tomatoes and peas. Add fresh ground black pepper and parsley to taste at table-side
